Itinerary
If you’ve ever fancied trying your hand at Thai cookery then this is the tour for you. Under the supervision of expert chefs at the Chiang Mai cookery school, you’ll be taught everything from choosing the right ingredients to creating a delicious three-course meal.
The day starts at 09.30 with a short trip from your hotel to the school. After an initial introduction, you’ll spend the first hour listening to a brief presentation on the details of the course and the joys of Thai cuisine.
This is followed by your first hands-on experience as you get to prepare a traditional Thai dish. Just make sure you follow the recipe carefully, as this will also be your lunch.
After a fine repast it’s back to the kitchen where you’ll prepare two further dishes and enjoy a seasonal fruit tasting session. As with lunch, the dishes you prepare in the afternoon – as well as those prepared by your classmates – will be served for dinner.
This wonderful culinary experience ends at around 17.00 with the transfer back to your hotel.

Course 1 – Introduction to Thai ingredients
What better way to understand Thai food than by learning about the ingredients? You’ll be introduced to each of the items to be used, shown how best to prepare and store them and given tips on the use of alternatives – a great tip for when you get back home and want to try out what you’ve learned.
Menu:
Tom yam goong – Thai hot and sour prawn soup.
Kaeng kiew wan gai – green curry with chicken.
Phad Thai – Thai fried noodles.
Tord man pla – Thai-style fish cakes.
Lab gai – minced chicken salad.
Tab tim krob – water chestnuts with sugar syrup and coconut milk.
Course 2 – Making the curry pastes
Learn how to make traditional curry pastes – a staple of Thai cuisine. You’ll be taught how to prepare the ingredients and then grind them into a paste using a mortar and pestle.
Menu:
Kaeng hanglay gai – Chiang Mai curry with chicken.
Panaeng moo – panaeng curry with pork.
Pla laad prik – fried fish with chilli and basil.
Phadpreaw-wan pak – sweet and sour vegetables.
Yam wun sen – glass noodle salad.
Khaawneow dam piak – black sticky rice pudding.
Course 3 – Tour of the local market
Take a trip to an authentic local market to discover all you need to know about the vegetables, herbs, roots and spices on sale.
Menu:
Kaeng ped pla – red curry with fish.
Tom kha gai – chicken in coconut milk soup.
Phad hed horm – fried mixed mushrooms with baby corn.
Raad nah – fried big noodles with a thick sauce.
Somtam-khao neaw – papaya salad and sticky rice.
Khanomkluay – steamed banana cake.
Course 4 – Shopping at the market
The key to a great meal is choosing the finest ingredients and on this course you’ll be taught how to do just that. You’ll even be given a list of the things you need and have the fun of buying them. (At no expense to yourself.)
Menu:
Hoe neung pla – steamed fish in banana leaves.
Kaeng garee gai – yellow curry with chicken.
Gai phad med mamuang – chicken with cashew nuts.
Phad siewe – fried big noodles with a sweet soy sauce.
Plaah goong – prawn salad North Eastern style.
Kluaybuad chee – banana in coconut milk.
Course 5 – Vegetable carving
Learn the basics of this amazing skill, including handling the knives and carving your very own flowers and leaves.
Menu:
Kaeng phed ped yang – red curry with roast duck.
Tom jued – clear soup with minced pork.
Paw pia tord – spring rolls.
Gaiphad med-ma muang – chicken with ginger.
Gar hor bai toey – chicken in pandanus leaves.
Khaawneow ma muang – mango with sticky rice.
